Keeping equipment clean and infection-free is one the best ways for brewer to make high quality and tasting beer. There are a lot of ways to keep equipment clean. Ask ten brewers, you are likely to get sightly ten different answers.

Cleaning vs Sanitizing---What is the difference?
 
Although often said as similar meaning, there is big difference between cleaning and sanitizing.
Cleaning agents remove dirty debris, beer-stone. While they make the equipment clean, they are not designed to sanitize your equipment. However, a sanitizer have bactericidal properties.
Here we would like to share one common procedure of CIP cleaning and sanitizing.
 
1. Clean water flush equipment surface to remove the apparent debris. Last 20minutes.
2. 3%-5% caustic liquid (NaOH) as the Alkaline agents. Last 20minutes.
3. Clean water flush the residual caustic. Last 20minutes.
4. 0.3% H2O2 as the acid agent and sanitizing agent. Last 20minutes.
