the fermentation process is different between Industry Beer and the Craft Beer.Industrial beer is ferment on top, known as ales, Craft Beer  is ferment on Bottom ,known as Larges. Those two fermentation process is also the best, The main difference is :the yeast located in the fermentation process and the fermentation temperature.
as the blow picture shows:

(1) Craft Beer.: mostly for the Ale, the yeast work in the top of the fermentation tank, floating above the liquor, the fermentation temperature is generally controlled at 10-20 ℃. The fermentor is usually small and does not undergo filtration and sterilization after the fermentation.

(2) industrial beer: mostly for the Lager , the yeast work in the bottom of the fermentation tank, sink in the bottom of the wine, the fermentation temperature is generally controlled below 10 ℃. Fermentation tank is large, after the end of the fermentation is usually used to filter and pasteurization, increase the shelf life of beer (shelf life).
