Fermentation tank characteristic

Fermentation tank characteristic:
1. Cone degree is among 60-90 degree
2. Cooling jacket area: tank cylinder should have 2-3 cooling jacket area, cone should have one cooling jacket area.  
3. Conical fermentation unitank should have two function, discharging CO2 during fermentation and carbonating during conditioning.
4. Convection exist in fermenter. As the temperature in fermentation tank differ as location, thus convection will come. The convection is different during main fermentation phase and conditioning phase. The higher temperature beer will go up and colder temperature bee will go down during main fermentation phase, while the higher temperature beer will go down and colder temperature bee will go up during conditioning phase
5. Conical fermenter should have certain height to sedimentate yeast.
15m is suggested highest tank according to experience. While 1/3 to 1/5 is suggested for the ratio of diameter and height.
