Wort Saccharification

1)Equipment checking: Check boiling tank, lauter tun ( the mash tun and boiling
tank will be in one unit in small brewing line) , pipe fittings, valves, meters and supply of water,
electricity, steam and make sure all of them under the right condition. If there isn’t any
abnormal condition, clean them and ready for materials feeding. During the electric heating
process should open the valve of whirlpool and wort pump 3 – 5 minutes.
 
2)Prepare feeding water: add tap water 500 kg into boiling tank and then heat them.During the
heating process should open the valve of whirlpool and wort pump 3 – 5 minutes to help their
mixing in more even way. Heat them and make the temperature up to 68℃, then stop heating
work. Open the related valves and start the wort pump and pumped into the water, 290 kg
from bottom of lauter tun.
 
3)Feeding 55 ℃ (protein decomposition): first activate the filter tank mixing, malt powder into
lauter tun, after stirring uniform then stop it. starting time, for producing wheat beer, first
should put into barley malt and then stir them uniform and after that put wheat malt,
stir uniform; maintain the temperature of 55 ± 1 ℃, time 70 minutes;
 
4)Producing mash water: add water into boiling tank upto 500kg sequentially, started heating,
warming up to 100 ℃, stop heating; open the related valves, ready to start wort pump and
ready for producing the mash water.
 
5)Producing mash water 66 ℃ (starch saccharification): Stirring the mash water of lauter tun,
while stirring pump into 100 ℃ hot water from the bottom of lauter tun. The temperature of
producing mash water kept as 66 ℃; After controled the temperature for black beer well, add
Coke-malt / empyreumatique malt and black  malt powder, stirring evenly (3-5 minutes);
please note, should keep under 66 ℃ as 80 minutes.
 
6)Preparation of water for washing tank: after the left hot water of boiling tank stop boiling and
drain the feculence as furring out. Pumped water into the tank from the bottom of lauter tun.
the level should not exceed on the head, and then start lauter tun for stirring 3-5 minutes, then
stop 10-15 minutes; During the time, cleaning boiling tank and ready for filter.
