Water: High-quality water is essential for brewing any beer, and Czech Lager is no exception.
Malt: Czech Pilsner malt is typically used. It is a pale malt that provides the base flavor and color for the beer.
Hops: Saaz hops, a noble hop variety from the Czech Republic, are a key component of Czech Lager. They contribute a mild, herbal, and slightly spicy aroma and flavor.
Yeast: Lager yeast strains are used, which ferment the beer at lower temperatures compared to ale yeast strains.
Brewing Process:
Mashing: The malted barley is mixed with hot water in a process called mashing. This activates enzymes in the malt, which convert the starches in the barley into sugars. The result is a sweet liquid known as wort.
Boiling: The wort is then boiled and hops are added. The hopping process typically includes a bittering addition at the beginning of the boil and flavor/aroma additions towards the end. Saaz hops are often added for their characteristic mild bitterness and aroma.
Cooling and Fermentation: After boiling, the wort is rapidly cooled and transferred to a fermentation vessel. Lager yeast is added, and the fermentation takes place at cooler temperatures, usually around 45-55°F (7-13°C). This slow fermentation process helps develop the clean and crisp character of the beer.
Maturation: After primary fermentation, the beer undergoes a maturation or conditioning phase. This can take several weeks to several months, during which the beer continues to develop its flavors and clarity.
Filtration and Carbonation: The beer is filtered to remove any remaining solids, and then carbonation is added before bottling or kegging.
Packaging: The finished beer is packaged in bottles, cans, or kegs and is ready for distribution.
Key Characteristics of Czech Lager:
Color: Pale to golden in color, with excellent clarity.
Aroma: Subtle hop aroma with floral, herbal, and slightly spicy notes from the Saaz hops. Malt aroma is restrained.
Flavor: Balanced between the malt and hop flavors, with a noticeable but not overpowering bitterness. Crisp and refreshing taste.
Mouthfeel: Medium body, moderate carbonation, and a smooth mouthfeel.
Alcohol Content: Typically around 4-5% ABV (alcohol by volume).
