Mash Conversion: Before lautering, the mash conversion process takes place. This involves mixing crushed malted grains with hot water to extract fermentable sugars and enzymes. The mash is typically held at specific temperatures for different periods to allow enzymatic activity for starch conversion.
Vorlauf: Once the mash conversion is complete, the first step in lautering is called vorlauf. This involves recirculating the mash wort back into the mash tun to clarify it. This recirculation process helps settle the grain bed and removes fine particles, resulting in a clearer wort.
Grain Bed Preparation: After vorlauf, the grain bed is prepared for lautering. The grain bed consists of the spent grains from the mashing process. It forms a natural filter medium that separates the liquid wort from the solids. The grain bed needs to be evenly distributed and compacted to create a stable filter.
Lauter Tun: The lauter tun is a vessel designed specifically for lautering. It typically has a perforated false bottom or a manifold system that allows the wort to flow through while retaining the grain bed. The lauter tun is often equipped with a sparging system, which will be used later in the lautering process.
Sparge Water: After the grain bed is prepared, sparge water is introduced to the lauter tun. Sparge water is hot water used to rinse the grain bed, extracting the remaining sugars. The sparge water is typically heated to a temperature close to the mash temperature to avoid denaturing enzymes.
Lautering: Lautering involves slowly and evenly distributing the sparge water over the grain bed. Collection of Wort: As the lautering process continues, the wort is collected in the brew kettle.
