As we know, the finer the pulverization, the larger the action surface of the enzyme, and the better the content can be broken down. In the process of wort filtration after mashing, the more complete the husk is, the better the filtration is.
Since the husks are required for wort filtration, the malt powder should try to keep the husks from breaking as much as possible at all times. Dried husks can easily crack, reducing filter ability. Conversely, the moister the bark, the greater the elasticity. Adding water to moisten the husk will better protect its elasticity and the wort will be filtered faster, a process called "humidification".
The degree of crushing affects the volume of the spent grains and the filtration capacity of the spent grains. For the filter tank that is generally applicable now: the finer the malt is pulverized, the smaller the volume of the spent grains, the finer the malt pulverization, the worse the permeability of the grains layer, the faster the sucking speed of the grains, and the longer the filtration time. There is even a situation where the wort cannot continue to be filtered at all. Therefore, when using the filter tank, the malt should not be crushed too finely. If the crushing is fine, the thickness of the wort layer should be reduced accordingly.
