Mash Concentration
The Mash concentration is determined by the ratio of malt and water.
Usually ratio of malt and water 1:3 can get 20°P for first wort.
The mash concentration has significant effect for mashing leaching efficiency.
So you need to choose the optimal value based on different beer.
If you are brewing tmave beer, the plato could be 18-20.
But if you are brewing light color beer, plato should be not over 16Plato.
Because the higher Plato can negatively affect the enzyme activity.
PH Value:
The optimal temperature for all the enzymes in malt is a little lower than mash PH.
So usually we need to adjust the PH to 5.4-5.6
