When it comes to bourbon production using corn, a higher cooking temperature of 190°F is needed. Therefore, a mash tun with a steam jacket or steam coil is more suitable for producing bourbon. However, an external hot water tank (HLT) can still be beneficial, as it reduces heat-up times and provides hot water for various purposes, such as cleaning and sanitizing.
In a distillery, you may also encounter a vessel known as a lauter tun, which appears similar to a mash tun in terms of size and features a mixing rake for even heat distribution. However, the distinctive feature of a lauter tun is the inclusion of a false bottom—a raised, perforated floor that allows liquid to drain from the grain bed, effectively acting as a strainer.
For space-saving considerations, some distilleries opt for a combo lauter/mash tun. This combination vessel serves as a mash tun with a false bottom for lautering, helping conserve floor space. However, it can only perform one process at a time, meaning you cannot cook and laut at the same time. For optimal production capacity, separate dedicated tanks are typically required for each process.
There are also compact combo systems designed for recipe development, with the mash/lauter tun integrated atop a boil tank to save space. However, these setups are generally not suitable for large-scale production and are often utilized by hobbyists due to their limited volume capacity and relatively high cost.
In the realm of whiskey production, there are specific mash tuns known as cereal cookers, tailored to the needs of bourbon distillers. These cookers are optimized for fermenting and distilling with grains in solids, eliminating the need for lautering. The process involves cooking the bourbon mash, pumping it directly to the fermentation vessel, and after fermentation, transferring the resulting beer-like liquid to the still for distillation. This approach is commonly used by renowned bourbon distilleries.
