Mashing Oxidation
Mashing Oxidation can cause the beer to heavy colour, roof taste and lower the flavour stability. Mashing oxidation can also change the protein and make many molecule agglomeration to bring difficulty for starch resolve.
There are three conditions that can bring wort oxidation.
1. Transfer mash from vessel top.
2. Too quick rake motor speed.
3. Using pump to transfer mash to Lauter tun.
How to solve wort oxidation:
1. Equip a grist hydrator on top.
2. Pushing mash through vessel bottomed port.
3. Install VFD for Rake motor.
4. Using inactive gas like Nitrogen to stop oxygen to touch wort.
