Microbrewery equipment steam venting chimney or steam condensor

During beer brewing process, boiling wort is one of the most crucial and complex aspects of the brewing process. It will spent lot of steam or electric for heating the wort, and generate lot of vapor during wort boiling stage. We should make such vapor to outside or drain. Whatever micro brewery equipment, nano brewery equipment,commercial brewery equipment, They all should to chose suitable steam venting solution, should we choose steam venting chimney or steam condensor?

Generally, for the brewery capacity lower 2000L volume, it usually have steam condensor as below:

The steam condensor will condensate vapor into water and exhaust to drain.
There are usually 2-3 nozzles sparying city water, the city water will show in fan-shaped to cover big area, and press on vapor, the vapor will become water and flow down; after vapor become condensate water, there will happen vacuum condition, and then fasten vapor goes out.
The condensate water will go to drain, or flow into condensate water tank, here the water will become heat, it will be used in steam generator again.

While, in some large brewery, the steam venting chimney is essential,picture as below.

For large kettle tun, it will occurs much more vapor than small capacity. The steam condenser is not enough to help remove the vapor. It should come with vent chimney to lead vapor to outside. The three vessel or four vessel brewhouse usually come with chimney.
Inside chimney, there have baffle to adjust the vapor expelling speed.
With venting chimney, it makes whole brewhouse looks much industry and strong.
