Microbrewery malt technological characteristics

Special malt has the following technological characteristics.

(1) Burnt malt burnt malt is processed on the basis of common malt. When processing burnt malt, the moisture content of malt should reach about 50%, and then it should be put into the rotary drum oven to continue decomposition at 60 ~ 70 ℃, so that the whole granules can be dissolved, and the protein decomposition is more than the starch decomposition. At this stage, the malt should be kept for about 2 hours, and then it should be heated to about 115 ℃ for baking.
Burnt malt has a certain leaching rate and can provide deep color and aroma for wort. It has no saccharifying power. Therefore, it can be used together with normal burnt malt to increase malt flavor and mellow feeling of beer.

(2) The production of colored malt usually uses dry malt or withered malt, which is roasted in a drum oven. Under high temperature, it produces melanin like and burnt taste, and the color of malt section changes to dark brown. In the production process, the temperature and time are controlled as follows: 60 ~ 80 ℃ for 30 ~ 60min; temperature rise to 165 ℃ within 30 ~ 60min; temperature rise to 190 ℃ within 90 ~ 120min; baking for 30min and cooling.
The most important characteristic of colored malt is its strong coloring power. The chromaticity is (1.3 ~ 1.6) × 103 EBC units, and the chromaticity can be adjusted by adding 1% ~ 2%.
(3) When wheat malt is used to produce wheat malt, the soaking method is the same as that of barley. The soaking degree is about 44% in 38 ~ 55h, and then it enters the germination process. It is necessary to pay attention to reduce the feeding by 10% ~ 20% and turn over the wheat as much as possible.
The drying process of wheat malt should pay attention to the initial temperature, intermediate temperature and baking temperature. The initial temperature of single-layer high-efficiency drying furnace is 40 ~ 50 ℃, the intermediate temperature is 60 ℃, and the baking temperature is not more than 82 ℃.
(4) Sharp malt and short malt need to produce sharp malt and short malt in order to reduce the loss of malting, increase the mellow feeling and foam holding of beer. The main production process is to shorten the germination time of barley, so that the root buds of wheat grains stop germinating as soon as the white spots appear. The maltase has low yield and poor solubility. When used, it should be mixed with malt rich in enzyme or added enzyme saccharification method, and the addition amount is generally between 10% and 15%.
