Questions about micro brewery sizes

I know very little about brewing and have a quick question- It seems breweries sizes are described by their bbl (barrel) size, 2 bbl, 7 bbl, 15 bbl, etc. In terms of simple volume production how does the math work? For example, say if a 10 bbl brewery brews 40 hours a week how many barrels does the brewery produce in that week? I understand that there are many variables like beer style, number of fermentors and so on.

Answer:
As you said there are a lot of variables. But the basics are as follows. I am assuming by 10 bbl brewery you mean a brewery that is equipped with a 10 bbl brewhouse. This would mean each time said brewery brews they produce aproxomately 10 bbls of wort.
 
Depending on size and automation a "brew" can take take typically between 3 and 6 hours. Sometimes more if things don't go well. Depending on the system setup sometimes brews can be overlapped. This would be the case with a 4 vessel system but not with a 2 vessel system.
 
Using these estimates if a 10 bbl brewery has 40 brewer man hours per week at its disposal, and no fermentation capacity constrainsts, you could reasonably expect said brewery to produce somewhere between 60-130bbls of wort per week. Again these are estimates using a lot of assumptions for variables that make a big difference on this output.Question:
