Which method of grain malts milling you are using at brewery? Grain milling is the first step to brew craft beer. So the grist milling machine is also very important brewery equipment you should consider. In the brewery, there are roughly 4 methods of malt crushing: dry method, wet method, re-moisture method and maceration method.
1.Dry crushing:
It is a traditional crushing method with simple equipment and easy operation, and it is widely used in small and micro breweries.
The commonly used grist miller machine are roller milling machine, including two-roll, four-roll, five-roll, and six-roll grist milling machine. Commonly used are two-roll and four-roll types.
2.Wet crushing:
We need to soak the malt in hot water at about 50°C for 15-20 minutes, so that the water content of the malt reaches about 30%, and then enter the double-roll mill (the gap between the two rollers is 0.35-0.45mm), While milling , feed the mashing water (the ratio of material to water is above 1:3) into the wet miller machine to mix the powder, and put it into the mash tun while milling.
This method has higher saccharification efficiency and is beneficial to wort filtration.
3.Moisture-Returning Moistening Method:
Before crushing, the malt is humidified with water or steam to increase the moisture content of the barley skin, increase its flexibility, and achieve the purpose of breaking and not breaking when crushing.
There are two methods of humidification, water mist humidification and steam humidification.
4.Steep Moistening Method:
Store all or part of the dry malt that has been mashed once in the malt bin, and the malt enters the humidification cylinder. A water humidifier is installed at the entrance of the humidification cylinder, and soaked in warm water for 60 seconds to make the wheat skin absorb water to around 20%, and then enter the roller mill for crushing. The crushed malt powder is sprayed with warm water to adjust the slurry to meet the material-water ratio required for mashing, and finally the adjusted wheat slurry is sent to the mash pot by the mash pump.
It is a method of continuous impregnation, humidification and milling, which emerged in the 1980s, represented by the equipment of the German Hopman Company. Many large commercial breweries will introduce and adopt this new process and equipment.
