At brewery, yeast is necessary for beer fermenting process in the beer fermentation tank. After the wort is cooled and entered into beer fermenter, we need to add yeast inside of fermentor to help the wort fermenting.
If the microbrewery, commercial brewery has over 10000HL per year capacity, we suggest customers equip yeast propagation system. Long-term thinking, it save cost for brewery:-)
Mostly brewers will be doing a lot of re-use of yeast from high-volume beer by transferring cone to cone or storing in kegs. The original source of this will be dry yeast that will not need propagating .
They would want to propagate only for special beers and want to use a number of different yeasts. For example London 3 for a hazy beer or house Saison yeast. And maybe they would probably only need to prop yeast for 90HL to 180HL of wort per week so they might only need a simple, smaller system.
