PVPP (Polyvinylpolypyrrolidone)
PVPP is used to remove polyphenols, which also contribute to haze formation.· Dosage: PVPP is generally used at a rate of 10 to 50 grams per hectoliter (0.1 to 0.5 g/L) of beer. The specific dosage depends on the polyphenol content and the clarity goals.
Combined Usage
When using both silica gel and PVPP, it's important to find a balance that effectively reduces both protein and polyphenol content without overprocessing the beer.1. Silica Gel Addition: Add silica gel to the beer first. This allows it to adsorb proteins before PVPP is introduced.
2. PVPP Addition: After a short period (typically 10-20 minutes) of silica gel contact, add PVPP to the beer to target polyphenols.
Procedure
1. Preparation: Dissolve the required amounts of silica gel and PVPP in water to create a slurry. This ensures even distribution when added to the beer.2. Addition: Slowly add the prepared silica gel slurry to the beer while mixing thoroughly to ensure even dispersion.
3. Mixing Time: Allow the silica gel to interact with the beer for about 10-20 minutes.
4. PVPP Addition: Introduce the PVPP slurry while continuing to mix.
5. Contact Time: Allow the PVPP to interact with the beer for an additional 10-20 minutes.
6. Filtration: Proceed with the filtration process to remove the spent silica gel, PVPP, and adsorbed haze-forming compounds.
Fine-Tuning
· Trial Batches: Conduct small-scale trials to determine the optimal dosages for your specific beer.· Monitoring: Regularly monitor the clarity and stability of the beer after treatment to ensure the desired results are achieved.
