As you know, for a beer microbrewery, the heating can be electric, steam and direct fire type.
For the bigger beer brewing equipment that is bigger than 1000L , it is better to choose the steam heating. While the steam boiler is rather expensive and also needs a lot of government test.
 
So direct fire heating is popular in many countries to build a brewery. But how to change the structure to make it good to use? Kettle is no doubt and must have the heating.
 
If you want to have heating in the mash tun, we have two solutions as follows:
What kinds of mashing methods do you like to use? Infusion or decoction?
If you really want to have heating in the mash tun, We have two solutions:
 
1) Solution I:
 3 vessel: Mash tun, Lauter tun, kettle/whirlpool tun which American customers like a lot.
Advantages: Can heating in mash tun and kettle,
            Could do two batches per day and save some time.
            Possibility to do decoction mashing because of two heating tanks.
Disadvantages: another tank and cost is higher.
 
2) Solution II:
2 vessel: Mash/Kettle tun, Lauter/whirlpool tun(one on top, on at bottom,combined tank)
 which is quite popular with European customers.
 
Advantages: Cost is lower: only for combined tank and agitator in mash/kettle).
 But enough to start with. And can heat when mashing and boiling.
 
Disadvantages: One burner heating, can use the infusion mashing while could not use the decoction mashing method.
 
Direct fire heating will have a fire room at the bottom. So also need to consider the ceiling height for your beer brewery building.
