Ingredients:
1 SCOBY (symbiotic culture of bacteria and yeast)
1 cup of starter tea (previously brewed kombucha)
8-10 tea bags or 2-3 tablespoons loose leaf tea
1 cup of sugar
1 gallon of water

Instructions:
1. Boil the water in a large pot and remove from heat.
2. Add tea bags or loose leaf tea and let steep for 5-10 minutes.
3. Remove tea bags or strain loose leaf tea and add sugar. Stir until sugar dissolves.
4. Let the tea cool to room temperature.
5. Transfer the tea to a large glass jar and add SCOBY and starter tea.
6. Cover the jar with a cheesecloth or coffee filter and secure it with a rubber band.
7. Store the jar in a warm, dark place, ideally between 68-85°F (20-30°C), for 7-14 days, depending on desired taste and strength.
8. Once the kombucha has fermented to your liking, carefully remove the SCOBY and some of the liquid to use as starter tea for your next batch.
9. Transfer the rest of the kombucha to airtight bottles and refrigerate.
Note: It's important to use clean equipment and follow proper sanitation practices when making kombucha to avoid contamination and ensure a safe fermentation process.
