Technical key points of hot solidification separation in wort whirlpooling process with TIANTAI Brewery Equipment

Hot solidification separation is indispensable process for wort whirlpooling in the craft beer brewing process. The goal of using the wort whirlpool tank to separate thermal coagulation is: wort turbidity <10EBC; wort solid particles <25mg/L. The thermal coagulation is completely separated and can form a good solidification mound. To achieve this goal, pay attention to the following technical points:
 
1.Wort Heating Time
The heating time should be short. The whole time should be less than 60 minutes from the end of boiling to the pumping of hot wort into the wort whirlpool tank until the end of sedimentation.
 
2.Hot Wort Delivery
(1).The delivery of hot wort should be smooth and gentle to avoid cavitation, otherwise shear force will be formed to break the coagulum.
(2).The delivery speed of hot wort should not be too fast, and should not exceed 5m/s. Usually, lower pumping speeds are sufficient to swirl the wort, creating a swirling effect.
(3).After the hot wort is pumped into the wort whirlpool tank, the pump should be turned off in time to avoid air entering and forming air bubbles.

3.Pumping of Hot Wort
The wort generally needs to stand for 20-40 minutes in the wort whirlpool tank, but not less than 20 minutes. Generally, there are two or even more wort outlets on the side of the wort whirlpool tank. When the standing is over, the wort should be discharged from the highest outlet first. When the liquid level drops close to the top of the concretion mound, the wort pump should be adjusted precisely so that the pumping speed is lower than the speed at which the wort seeps out of the conical mound of the hot coagulum, so as to avoid the splitting of the hot coagulum Collapse, enter the plate heat exchanger together with the wort, block the plate heat exchanger, and even affect the normal fermentation of the yeast. In addition, the use of granular hops is conducive to the formation of firm thermal coagulation mounds, and at the same time can reduce wine damage.
