Bitter and Aroma Flavour in Hops
The hops is mainly composed of Hops Resin, Hops Oil and Polyphenols.
Hops can impart the beer pleasant bitter and aroma flavour.
The bitter in hops is mostly from Hops Resins, which include α-acid and β-acid.
α-acid Dissolution is so much to do with the PH unit of Wort. So we need to control the wort PH unit well to get bitter well.
Hops Oil is the most important item that offer aroma to the wort.
Hops Oil is easily evaporated out, so aroma hops can not be put in early stage or boiling.
Polyphenols is very helpful to settle the protein particle down during wort boiling. This is the ‘hot break’ that we need to remove by whirlpooling process.
