What the whirlpooling process removes out.

The whirlpooling process is used to remove the hot break, which is produced in wort boiling.
The hot break is mainly composed of compound of protein and polyphenols.
During wort boiling process,, more hot break comes out, the better for beer stability.
Its amounts in beer is usually 200g-400g/hl.
 
The hot break can affect the yeast fermenting and coming down. Also it can cause the beer color rise and make the beer taste rough. It can also reduce the beer foam stability.so we must remove them as much as possible.
