Brew 12% ABV beer with Tiantai craft brewery equipment

Here's a general outline of the brewing process for brewing 12% ABV beer with Tiantai craft brewery equipment. Brewing beer with malt and corn can create a beer with a distinct flavor profile, often to lighten the body and add fermentable sugars.

Ingredients:
Malted Grains: Choose a mix of malted barley or other grains like wheat for your base malt. This will provide the majority of the sugars needed for fermentation.
Corn: Corn can be used as an adjunct to supplement the fermentable sugars. Corn contributes a light flavor and can create a crisp finish in the beer.
Hops: Select hops that balance the sweetness from the corn and malt. Bittering hops for balancing bitterness and aroma hops for flavor and aroma are both important.
Yeast: Choose a yeast strain suitable for the style of beer you're brewing. Different yeast strains can impact the beer's flavor, aroma, and fermentation characteristics.

In brewhouse:
Mashing: Heat water in a mash tun to the appropriate temperature for your chosen malted grains.
Add the malted barley or other grains to create a mash. Hold the temperature in the range of 148-156°F (64-69°C) to convert starches into fermentable sugars.
Optionally, you can add flaked or cooked corn to the mash to provide additional sugars from the corn.
Boiling: Transfer the collected wort to the boil kettle and bring it to a boil.
Add hops during the boil for bitterness and flavor. The hop schedule will depend on the style you're brewing.
Corn Addition: If you want to use corn, you can add it during the boil. Corn can be added as flaked maize, corn grits, or corn syrup. It's best to pre-cook corn before adding it to the boil to ensure the starches are converted into fermentable sugars.
Cooling and Oxygenation: Quickly cool down the boiled wort to the desired fermentation temperature.
Oxygenate the cooled wort to support yeast fermentation.

In Fermentation Tank:
Pitch the selected yeast strain into the cooled and oxygenated wort.
Ferment the beer according to the yeast's temperature recommendations. This will vary based on the yeast strain.

In brite tank:
Once fermentation is complete and the target final gravity is reached, you can rack the beer to a secondary fermentation vessel for clarification and maturation.
Allow the beer to condition for a period of time to allow flavors to meld and mature.

It's important to note that using corn can affect the mouthfeel, flavor, and overall characteristics of the beer. Experimentation and careful recipe planning are key to achieving the desired balance and flavor profile in your beer. Tiantai company provide craft beer brewery equipment to brew all kinds of craft beer, from non alcohol beer to high alcohol beer, to meet specific needs.
