The external calandria
As we know, For brewhouse heating, it can be steam, direct fire and electric. The wort after heated to get the desired plato, then to be fermented.Heating is most important for kettle tun, we aim at voilent boiling. In some commercial brewery, more and more kettle tun adopt external calandria.
The external calandria is a tube heat exchanger. Its tubes will be filled with wort, and the chamber filled with steam. It highly improve the wort heating speed but avoid wort scorch well. There is a drawing to show you as below.
With external calandria is much easier to clean than internal calandria.
