Why beer has many foam in plastic disposable cup?
 
As we talked before, CO2, carbohydrate, water and protein combined the foam.
Protein plays a critical role in foam. There are long chain protein and short chain protein in beer.
Short protein is good for beer formation while long chain protein make beer have a longer foam retention.
So beer will have much foam if it contains much protein and Non-fermentable carbohydrates, like Wheat beer. The foam will also be rich if we fill much nitrogen in beer like Guinness.
 
But why there has much more foam in disposable cup for same kind beer.
Let’s introduce the material of disposable cup, it is a plastic material, this kinds material have a high hydrophobic property.
Disposable cup separate water forcibly by its high hydrophobic property.
So water in beer prefer to combined with CO2 instead of the plastic. So disposable cup is easy to foam but the foam is also easy to disappear. Foam is one of the important factors for tasting beer.
So we do not suggest to use plastic disposable cup to taste beer.
 
Nowdays there are different cups for different beer to appear special beer quality.
For example, people start to use the cup with bottom laser carvings for Belgian monastery series beer. This kind cup can form beautiful foam continually.
 
Lastly, we should pay attention on beer temperature. High temperature will make beer foam disappear. So it is best to drink cold beer. Wow, cool:-)
