Four method of malt milling
There are four popular method of malt milling, dry malt milling, wet malt milling, wetting-back humidifying, impregnation humidifying.

Dry malt milling is the most traditional and popular way for microbrewery. Fill the prepared malt into roller miller to crush directly. The roller miller can be double roller, four roller, five roller, six roller, etc. Double roller is the most popular model for mini or micro brewery. Dry malt milling is easy to operation, the dry miller is easy and cost lower. But the disadvantage is it has higher requirements of malt moisture content.
It is better that the malt moisture content is 6%-8%. if it is higher than 8%, the malt will be crushed into flaky one, rather than powdery one. If it is lower than 6%, it is hard to form a good spent grain bed to smooth filtration.
 
Regards wet malt milling, the malt need to be soaked into hot water for 15-20 min. The hot water temperature should be 50 Degree C. When the malt moisture content reach to 30% , put the malt into double roller miller to crush. At the same time, transfer water from mash tun into miller to mix, then water mix malt in miller, then transfer the mixture back mash tun. The malt husk has good toughness because of pre-soaking, so it is better to form a spend grain bed to smooth filtration. What’s more, it will decrease the dissolving out injurious ingredient from malt husk.
The disadvantage is it needs high capacity and power miller. Also it has high requirements of miller sanitary, otherwise it may become infected with bacteria.
So the malt should be crushed in short time.
 
Wetting-back humidifying method is humidify the malt by water or steam before crushing. It increase the moisture content and toughness of malt husk. The malt moisture content increase 1%-2% by humidify.
 
Impregnation humidifying method is impregnate malt in special humidifying cylinder for 60 second to make malt water absorption 20%, then put malt into miller to crush. There is no dust pollution.
