How to design the Kombucha primary fermentation tank

Designing a kombucha primary fermentation tank involves several considerations to ensure proper fermentation, quality, and safety of the product. Here are the key aspects to consider in designing the tank:

1. Material Selection
Stainless Steel: Preferably 304 or 316 stainless steel for its resistance to corrosion and ease of cleaning.
Food-Grade Plastic: High-density polyethylene (HDPE) or polypropylene (PP) can be used, but ensure they are food-grade and BPA-free.
2. Size and Shape
Capacity: Depending on the scale of production, tanks can range from a few gallons for home brewing to several hundred gallons for commercial production.
Shape: Cylindrical tanks are common for even distribution of heat and fermentation activity. Flat-bottom tanks can be used, but conical bottoms are better for sediment collection and ease of cleaning.
3. Temperature Control
Insulation: Tanks should be insulated to maintain a stable fermentation temperature, typically between 70-80°F (21-27°C).
Heating/Cooling Jackets: For precise temperature control, especially in larger commercial setups.
4. Aeration
Kombucha requires oxygen during primary fermentation. Tanks should be designed to allow air exchange, which can be achieved through:
Breather Valves: To prevent vacuum formation.
Airlocks: To allow CO2 to escape while preventing contaminants from entering.
Open-Top Design: For smaller batches, covering with a breathable cloth.
5. Agitation and Mixing
Stirring Mechanism: Gentle mixing can be achieved through mechanical stirrers or manual stirring to ensure uniform fermentation.
Avoid Over-Aeration: Too much agitation can lead to excessive oxygenation and spoilage.
6. Sanitation and Cleaning
CIP (Clean-In-Place) System: For large tanks, integrating a CIP system can ensure thorough cleaning and sanitation.
Easy Access: Design tanks with large openings or removable lids for manual cleaning in smaller setups.
7. Safety Features
Pressure Relief Valves: To release excess pressure buildup.
Sealed Edges and Gaskets: To prevent contamination.
8. Additional Features
Drain Valves: For easy removal of liquid and sediment.
Sampling Ports: To take samples without opening the tank.
Sight Glasses: For monitoring the liquid level.
pH and Temperature Probes: For real-time monitoring of fermentation conditions.
